A rare barrel of Palo Cortado Sherry was used to finish this very old and full-bodied Dominican rum, which has been aged for more than twenty years in Bourbon barrels in Santo Domingo. 

The intense journey across the North Atlantic Ocean allows the sailing barrels to deepen the character of their contents and perfect this great Choice of our Captain into a pure Caribbean pleasure! 

What does Captain's Choice mean?

Captain's Choice is a special limited edition. So there is only a limited number of bottles. It is literally the best rum as only the captain can choose. The difference with the non-Captain's Choice bottles is of course not only in the fact that this rum is still at cask strength and has not been drained. Of course, the captain doesn't tell all the secrets either...!

Origin and distillation

After the triple maturation process and sufficient time, a rare Palo Cortado Sherry barrel perfected this delicate Caribbean distillate during the journey home. 

But first this Tres Hombres Rum is matured in Bourbon barrels according to the Solera system. 

Nearly 5,000 miles of sailing across the North Atlantic has added enough adventure to give this rum its ever-evolving excellence upon arrival in Amsterdam. 

Oliver & Oliver uses the Solera system to mature the rum. The truth is that the word 'Solera' reveals a lot about the rum before you even taste it. 

How does the Solera system work? 

The Solera system originated in Spain and is used for a variety of drinks, with sherry being the most obvious, and balsamic vinegar perhaps the most surprising. The creation of a consistent, reliable and therefore high-quality product has always been the goal when crafting this fantastic rum. 

In Spanish, “solera” literally means “on the ground.” And when it comes to maturing liquids in this particular way, the barrels are organized into rows from the ground up, with the bottom layer of barrels containing the oldest matured liquid. 

The next row of barrels is called the first criaderas (or “nurseries” – the translation pretty much tells you everything you need to know) and contains the intermediate age and the second criaderas, the highest level in a three-row arrangement, contains the youngest average age fluid.

The design of this special bottle was made by one of the crew members. The beautiful drawing represents the work of the figurehead of the Tres Hombres.

The rum of this Captain's Choice selection was bottled entirely by Stokerij Amsterdam with the help of the Tres Hombres team.

The story

 

The life of the brigantine Tres Hombres began in 1943. At the time still without masts and in a wreck-like condition, she was discovered in 2007 by three friends in Delft, the Netherlands. With an incredible amount of diligence and dedication from many volunteers, she was brought back to life. Within just over 2 years we managed to completely restore the ship and convert it into a sailing ship that now crosses the Atlantic Ocean every year, sails the Northern European seas and covers these long transport distances exclusively with the power of the wind. 

 

Route

From Amsterdam to the Dominican Republic and back via the Azores

The rum of this Captain's Choice edition was collected in the Dominican Republic during the winter trip. The first crew boards in Den Helder on a ship that is in tip-top condition after the refit has been completed. Trainees, and sometimes crew, rotate occasionally during various stops, where cargo and food supplies are also loaded.

Previously used barrels are loaded in Douarnenez and Baiona and later filled with rum from La Palma and the Caribbean islands. These barrels provide an extra special taste that makes the Tres Hombres Rum unique. The rum of this Captain's Choice edition 59 is matured at sea in a Palo Cortado Sherry barrel. 

In Santa Cruz de la Palma, Fort-de-France, Marie-Galante, Bridgetown and Boca Chica the barrels are filled with different types of rum. Other products are also loaded on some islands, such as coffee beans and cocoa beans in the Dominican Republic.

Food supplies are stocked during the stopover in Horta on the Azores. Every now and then tea and tuna are also loaded there.
