Ocean Aged on Tres Hombres

Domaine :
Domaine de Chamans is a family-owned vineyard. The 14ha of vines, surrounded by garrigue and woodland, sit in
the south-facing foothills of the Montagne Noire in the Minervois region of the Languedoc.
Isolated from other vineyards,  the family pursues  their own non-interventionist farming philosophy, based on
organic and bio-dynamic principles.
Demeter and EcoCert certified (since 2010).

All wines are vinified, varietal by varietal, in French oak barrels, foudres, concrete
tanks and a concrete egg.

Vinification :
A slow pneumatic press for gentle juice extraction. Juice settled over 1 week for natural clarification at low temperatures.
Roussanne is racked into 2 or 3 seasons old French barrels for fermentation on total lies for 11 months. Grenache blanc
and Clairette aged for 11 months in stainless steel tanks.
After a light filtration, the wine is bottled to the cycles of the moon for stability with minimal added sulfur to protect the wine.
